Trout slathered in Beurre Blanc (white butter sauce) with parisienne potatoes and broccoli.
There was a day in between these where we ate Roasted Beef short ribs with glace de viande (demi glaze), mashed potatoes--but as soon as I plated mine, all I could think about was eating it! It was awesome!!

This is the view I have everyday of the groups across from me in the kitchen. Justin with the war face, and Kevin to the right flipping their food. Looks like they take it pretty seriously, huh?

Here is the new Italian Chef Instructor Roberto that is training in our room. This day he was doing a demo of Rissoto a la Milano. I asked him questions in Spanish as he made the Risotto. He answered me half in Italian and half Spanish-mostly Italian. It's so similar to Spanish that I had no problem understanding him.

Finished Risotto!!! Molto Bene, if you ask me!

James w/his guitar MacGuyver: he did his speech on tuning the guitar. It was great!

Later in the day, one of the other chef instructors came in and told us that because of the weather, our afternoon Gen Ed class was going to be canceled!! The only reason I was really excited about that was because I had a speech to give that day and I wasn't ready to give it. I had what I needed, but was not mentally ready. Later that night, I phoned the school's weather line and found out that school was also canceled for FRIDAY! A couple of us were mad about it because that was going to be the designated omellette day. :-(
I'll be ready by Monday to do my speech...I think.
